Typical Product
Brindisi is another area rich in two characteristic treasures of Apulia: olive oil and wine. The first is represented by
DOP Colline di Brindisi which inherits the antique traditions of productions, and is used with extreme versatility in the Apulian cuisine and even in baking. Among the wines, two types head the list of preferred accompaniments to lunch and dinner: The
Ostuni wines are available in white and rosé and are ideal companions for the traditional meals of the region; The
Brinidisi wines are red and rosé and were much appreciated during the Roman Empire for their structured, fruity taste and the characteristic bitterish aftertaste. The grapes from this area are used to augment those from other areas and form the
Valle d'Itria IGT mark that is available typically in white, sparkling, red, rosé and raisin wines. Also the oil and wines of
Cellino San Marco are famous nationally. Moreover there are different fairs and festivals during the year: horse, livestock and goat shows. Among the gastronomical delights one finds the fruit called
Barattiere which one eats before it has matured, with salads. Many varieties can be obtained and are differentiated by the colour of the skin and the size. The most common variety is round, and smooth with a green peel.
